Easiest Protein Pancakes

The thought of making pancakes on a busy work morning may seem impossible. But this healthy pancake recipe is so simple: it’s 3 ingredients, can be blended in a “Magic Bullet” just like your morning smoothie, and it cooks fast!

  • 1⁄3 c egg whites

  • 1⁄3 c oatmeal

  • 1⁄3 c cottage cheese

  • Optional: Stevia or splenda


1. Put the ingredients in a Magic Bullet cup - Tip: Put the egg whites in first so the oatmeal doesn’t stick to the bottom of the cup.

2. Blend until smooth.

3. Pour the batter onto a hot pan, making two large pancakes.

4. Cook each side of the pancake.

5. Top with your choice of: fruit, peanut butter + jam, or a drizzle of maple syrup.
